Clean Cold Brew

A clean, unsweetened cold brew brings Phoenix Dancong into an everyday bottle.

Hot brew method

  1. Use 3-5g leaves in a gaiwan or small pot.
  2. Rinse briefly with 95°C water, then brew in short infusions.
  3. Smell the lid and liquor first, then drink slowly.

Clean cold brew method

  1. Use 3g leaves with 500ml cold water.
  2. Refrigerate for 6-8 hours, or brew overnight.
  3. Drink without sugar or fruit so the tea aroma stays clear.
